
Quick & easy Spaghetti Carbonara
Ingredients
- 2tbsp Olive oil
- Pack of bacon lardons
- x3 cloves garlic (finely chopped)
- x3 eggs (beaten)
- Mature cheddar or Parmesan cheese (grate a bowl full)
- Spaghetti (enough for 4 people)
- Parsley (fresh or dried)
- Salt and Pepper
Method
- In a large pan boil some water for the spaghetti (add some salt too)
- Cook spaghetti for around 9 minutes
- Meanwhile heat the oil in a deep frying pan
- Fry the bacon lardons until browned
- Add the garlic, stirring all the time to avoid burning
- Take a ladle or two of the salted pasta water and pop in a cup to one side
- Beat the eggs in a jug and season lightly, adding half the grated cheese
- Drain the pasta and add to the bacon and garlic in the frying pan (make sure the hob is on low or off)
- Stir round ensuring the pasta is covered in the juicy bacon-garlic oil
- Add a few glugs of the water kept over
- Pour the beaten eggs over the pasta and stir (the hot frying pan should cook the egg mixture but be careful not to overcook or it will turn scrambled!)
- Keep stirring the pasta and egg mixture until saturated and egg has gone creamy colour
- Sprinkle parsley over the top with the rest of the cheese and serve immediately
